In the Kitchen with High Noon | Roasted Cherry Tomatoes
There is nothing we love more than entertaining friends over delicious food. Creating experiences and memories with our loved ones is at the heart of our mission here at High Noon.
We’re savoring the last bit of summer in Santa Fe, and to put it mildly, we have been drowning in tomatoes from our garden. While on the hunt for recipes that could help us savor the bounty, we found the perfect and oh so easy recipe from one of our favorite cookbooks Graze.
Roasted Cherry Tomatoes in Olive Oil
Ingredients:
- 2 pints of cherry tomatoes
- 4-6 cloves garlic
- About a ½ c olive oil (we use Brightland’s AWAKE Olive Oil)
- Sea salt and pepper (Jacobsen Salt Co. is the only stuff we use!)
Instructions:
- Preheat the oven to 250 degrees
- Combine the tomatoes, garlic cloves and olive oil on a baking sheet
- Sprinkle with salt and pepper
- Slow roast for about 2 hours
